Chia Pudding (serves 5 rather small portions)

160 ml unsweetened coconut milk
4 tbsp chia seeds
1 tsp vanilla
1 packet Sweet ‘n Low
1/2 tbsp gelatin
3/4 cup water
Blend coconut milk, chia seeds, vanilla, and Sweet ‘n Low in a food processor until desired consistency.
In pot, boil water with gelatin. Add blended mixture to this, and stir over a low heat until a homogeneous mixture is made. Put in the fridge to set.
To make a chocolate pudding, add 5 tsp cocoa powder.
Top with berries, toasted coconut, and chocolate. This is lovely with some cardamom spice mixed in!
