Roast Paprika Chicken with “Mashed Potatoes”

“Mashed Potatoes” (serves 1)
Net carbs: 3g

1 cup cauliflower florets
Handful of spinach
1 clove of garlic
1 tsp butter
Salt, pepper, Parmesan as desired

In food processor, blend cauliflower and spinach until fairly smooth. Meanwhile, heat butter in a frying pan, and fry garlic. Add the vegetable puree, cook at a low heat. I added some water to make the puree smoother, and added it back to the food processor to get a finer texture. I added it back to the fry pan, and added a pinch of salt and pepper. Finally, I topped this with grated parmesan. Kind of like mashed potatoes, but super low carb, and healthy!
