Lemon Salmon with Hollandaise Sauce

Salmon fillet
Lemon Juice (of about 1/8 lemon)
S and P
1 tsp butter

1 egg yolk
1 tsp lemon juice
Generous tbsp butter
A bit of lemon zest

Squeeze lemon over a salmon fillet and let marinate for about 10 minutes, then add salt and pepper to taste. Fry in 1 tsp of butter for just a few minutes on each side. Meanwhile, whip egg yolk with the tsp of lemon juice in a sauce pan over very low heat, and add half the tbsp of butter. When that butter is melted, add the rest of the butter and continue to whip: don’t let the sauce clump! Serve immediately over salmon, and top with lemon zest.
