Avocado Sushi with Spicy Crunch Mayo

Spicy Mayo
1 Tbsp mayonnaise
3/4 tsp sriracha
2 crushed pork rinds
Pinch of chopped green onion

Avocado Sushi
1/2 avocado
1 sheet of roasted seaweed
1 tsp of toasted sesame seeds (use some of this for garnishing)

Mix ingredients for spicy mayo. Cut avocado into six strips, and lay lengthwise on your seaweed paper on top of a sushi mat (the back of your seaweed package should have instructions for rolling sushi). Sprinkle sesame seeds (reserve some for garnish) over avocado. Roll your sushi, and seal by wetting the edge of the seaweed (like you would seal an envelope). Use a wet, serrated knife or very sharp knife to cut your sushi, being careful not to shred the seaweed. Top with spicy mayo and remaining sesame seeds.
This turned out REALLY well, next time I will add cucumber to the sushi to add a bit more crunch, and I will grind the pork rinds a little more coarsely! Ps seaweed is great and almost zero carbs…. next on the list is seaweed chips 🙂
