Thai Chicken Soup

Thai Chicken Soup (Serves 1)
Calories: 220
Net carbs: 5g

1 tsp coconut oil
1 small garlic clove, minced
1 tsp grated ginger
1/4 jalapeno pepper
1/3 cup chopped red pepper
1/2 cup of chopped chicken (I used leftovers from a roast)
1 tsp fish sauce
1 tsp soy sauce
1 cup chicken stock/broth
1 tbsp chopped cilantro
1/2 cup spinach
1 tsp sriracha
Squeeze of lime

In a small saucepan, heat coconut oil. Fry garlic and ginger for a few minutes, then add the jalapeno and red peppers, then add the chicken. If using raw chicken, heat until cooked through. Add fish sauce, soy sauce, and chicken stock. Add cilantro and spinach, and cook until spinach is wilted. Add sriracha and lime juice, and serve. You might need more sriracha, depending how much spicy ya like!
