Bacon Roasted Chicken
Just like the title: it’s a chicken roasted with bacon!
1. Preheat oven to 350 F
2. Sprinkle a little rosemary over the chicken, then lay three strips of bacon over it.
3. Pop it into the oven for 1-1-1.5 hours, depending on the size, until fully cooked. Broil it for about 5 minutes to crisp up the bacon. Baste it with its own juices every now and then.
I carved the chicken, and used the carcass to make chicken stock. For my stock, I chucked the carcass into a large pot, covered it with water,and added:
One chopped carrot
One rib of celery broken into 3 pieces
One onion (quartered)
3 whole cloves of garlic
One bay leaf
Pinch of salt
I simmered it all covered on low heat for about 4 hours, although the longer the better if you’ve got the time. After you take it off the heat, strain the stock, let it cool, and skim the fat off.
